Smashed Potato Salad

A twist on the classic potato salad!

What you need

Ingredients

  • 2 packs of Chilli Baby Potato
  • 2 tbsp Greek yogurt
  • 2 tbsp Mayonnaise
  • Juice 1/2 lemon
  • 1/2 cucumber
  • 1 red onion
  • 1 tsp honey
  • Handful of fresh dill

Recipe method

1. Air fry those chilli baby potatoes for about 15 minutes. Take them out and pop them on a lined baking tray.

2. Smash time! Use a glass or a masher to smash those potatoes. Give them a little oil spray and throw them in the oven or back in the air fryer.

3. Finely chop the red onion, cucumber, and dill.

4. Mix it up! In a large bowl, mix together mayo, Greek yogurt, lemon juice, mustard, honey, and your chopped veggies.

5. Combine & Serve! Toss in the smashed potatoes, mix it all up, and get ready to dig in!
