Chris & Marty’s Fish Pie

What you need

Ingredients

  • 1 pack of Mash Direct Southern Fried Potatoes
  • 1 pack of Mash Direct Broccoli with a Cheese Sauce
  • 2 salmon fillets
  • 2 onions, chopped
  • 2 celery sticks, chopped
  • Butter
  • 1 tbsp of mustard
  • 500ml of milk
  • 50g flour
  • Fresh parsley
  • Garlic, chopped
  • Grated cheese
  • Chilli
  • Salt
  • Pepper

Recipe method

Cook the Mash Direct Southern Fried Potatoes and Broccoli with a Cheese Sauce as per instructions on pack.

Melt some butter in a pan and add the chopped onions and celery, soften but don’t brown them. Set to the side off heat.

In a second pan, melt more butter over a medium heat, and add mustard then slowly add milk, flour and some fresh parsley.

Increase heat and bring to off boiling. Whisk or stir until it creates a sauce, reduce heat to low once it begins to thicken. Don’t be afraid to add more milk if it’s too thick.

Combine the contents of both pans and add chopped garlic and an optional chilli for some spice.

Chop up fish of your choice, and add to the sauce, stir through and leave to simmer for 3-4 minutes. Season with salt and pepper.

You can use a medium size casserole dish to make one family size pie, or use smaller oven proof dishes for individual portions.

Empty contents of pan into casserole dish as required. Fill to just above half way, but not over 3/4 mark.

Layer potatoes on top, making sure to overlap the first layer and start from the middle, working out to the edges. You can add several layers for extra crunch.

Place in middle of oven for approx 25-30 at 185°C or until top layer is golden and crisp.

Grate some cheese over the warm crisp topping before serving if you wish.

Perfect to serve as it is, or with a side of veg.
