Chicken Katsu with Skinny Fries

A delicious twist on the classic katsu curry!

What you need

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion
  • 2 cloves of garlic
  • 1 tsp ginger
  • 1 tsp tumeric
  • 2 heaped tbsp mild curry powder
  • 1 tbsp plain flour
  • 300ml chicken stock
  • 100ml coconut milk
  • 1 tsp light soy sauce
  • 1 tsp sugar
  • 2 chicken breast
  • 2 eggs
  • 1 pack of panko breadcrumbs

Recipe method

Coat the chicken breasts with egg and flour and cover with panko bread crumbs.

Bake in the air fryer for 20 minutes along with Mash Direct Skinny Fries (12 minutes).

Start to soften the onions, garlic and ginger then add curry powder, turmeric. allow to sit on a low to medium heat.

Add the flour, cook for 1 minute with the spices. add the chicken stock slowly, followed by the 100ml coconut milk. add pinch of sugar, salt and a dash of soy sauce.

Strain through a sieve, a little bit at a time, to make it smooth.

Serve altogether pouring the sauce over the fries. Garnish with chilli and coriander.

Make it a meal.
