Chicken Gyros with Skinny Fries

A great dinner idea for the summer hols!

What you need

Ingredients

  • Mash Direct Skinny Fries
  • 2 Chicken breasts/thighs
  • 2 Flatbreads
  • 4 tbsp greek yogurt
  • 1/2 cucumber
  • Handful cherry tomatoes
  • 1/4 Red onion
  • Fresh dill and coriander
  • Juice of 1/2 lemon
  • 1 tsp of garlic (or one - two cloves)
  • 2 tsp smoked paprika
  • Salt & pepper
  • 1/2 tsp garlic granules
  • 1/2 tsp mixed herbs

Recipe method

1. Place skinny fries in the air fryer for 9 - 12 minutes, shaking halfway through.

2. Mix together the smoked paprika, mixed herbs, cumin, salt, pepper and 2 tbsp yogurt. Add chopped chicken and optional to marinade in the fridge for an hour.

3. Place the chicken in the airfryer and cook for 10-15 minutes on each side.

4. For the tzatzki, grate the cucumber and mix with the remaining greek yogurt, lemon juice, salt, pepper and fresh herbs.

5. Prepare vegetables by chopping tomatoes, onion and cucumber.

6. Once chicken is cooked through, roughly chop into bite-sized pieces.

7. Assemble on the flat bread and wrap with baking paper to hold the shape. Enjoy!
