1. Add the beaten eggs, spices, spring onions, parsley, flour and grated parmesan to the carrot & parsnip and season generously with salt and pepper. Mix with your hands or with a wooden spoon until well combined.
2. For the herby yogurt, mix all the ingredients together in a bowl and add some salt and pepper.
3. Cook the fritters in a little bit of oil in a non-stick frying pan. Only add mixture once the oil is hot. Cook for 3 – 4 minutes.
